Common method for candied orange peel: Ingredients: 3-5 fresh orange peels (depending on the size of the sample), 80g fine sugar, 80g water, appropriate amount of fine sugar (for sticking the orange peel pieces together).

  Steps:

  1. Wash the freshly picked orange peels, clean the skin, and use a knife to clean the white part of the albedo. The white part has a bitter taste, leaving only the orange peel. (If the method of removing the albedo with a knife is used properly, the albedo can be easily removed).

  2. Put the orange peels with the albedo removed into a pot and add enough water (the more water the better). Bring to a boil over high heat, then reduce heat and simmer for 10 minutes. Turn off the heat and soak for about 30-60 minutes to remove bitterness.

  3. Remove the orange peels and cut them into strips about 0.5cm wide with scissors. (Pour out the water in which the orange peels were boiled; do not discard it).

  4. Pour 480g sugar + 80g water into a pot and cook the sugar over medium-low heat; add the orange peel strips and cook over medium-low heat until the water evaporates completely and the orange peels become translucent. (Suggestion: Do not leave the pot; stir constantly to prevent sticking to the bottom of the pot, as there is only 80g of water, it will evaporate quickly).

  5. Pour the orange peel strips out of the pot, spread them on a flat surface, let them cool, and let the water evaporate for a while. (Let it air dry for about half an hour).

  6. Put some fine sugar in a bowl, and put the dried orange peel strips into the fine sugar, so that they are covered with sugar grains.

  7. Put them in a jar and keep them sealed. They will gradually become softer and more transparent, without bitterness, and sweeter, and can be taken out as needed.

  Tips:

  1. The orange peels I used were very thin. If the orange peels are thicker, please extend the blanching and de-bittering process appropriately, which is step 2.

  2. You don't have to deliberately eat oranges to make candied orange peels. It is recommended to collect the orange peels from the oranges you eat every day, seal them in a bag, store them in the refrigerator, and collect the orange peels from the oranges you eat after three or five days to make them together.
